In that case it shouldn’t say this on the insert album and insert album set tabs

For Kookaburra templated pages, do not use; use Kookaburra’s essay features instead.

since there is no way to actually assign them in Kookaburra’s essay features.

That’s not the point. The point is that you can insert images from an album (or albums) on the home page via the Essay feature.
And on the Insert Album Set tab, it simply says that it can’t be used for Kookaburra pages
