Since I need 2 top level galleries, I replaced “Galleries” in the default Menu set with Photo Galleries and Jewelry Galleries.
Will this cause any issues?
If yes, please suggest an alternative approach.

I use 4 or 5 top-level galleries without any issues.
Backlight is meant to support this. We create “Galleries” as default just to make the initial setup as breezy as possible for the majority of users.
